Breakfast Made Easy! Three Ingredient Pancakes.

These are a hit in my house because they are yummy and so easy to make!


Banana, Eggs, Chia Seeds


I'm craving these now!

“The best pancake topping is more pancakes!"

Like a lot of other families, we're wanting to avoid the stores as much as possible #stayhome but we're also having a hard time getting groceries delivered. I am doing my best to use what we have in the house and making it stretch as much as possible. Depending on how big you make your pancakes, you can get at least ten out of this recipe.

Ingredients:

1 Banana

2 Eggs

1 tbs Chia Seeds

** You can add cinnamon or vanilla. I haven't done that yet so let me know how it tastes!


Combine all ingredients in a blender until smooth.

Heat a non-stick skillet or griddle over medium-high heat.

Melt butter (I use Earth Balance Soy Free) in skillet. (optional)

Spoon batter into skillet and cook until the top of the batter starts to bubble.

Turn and cook other side until lightly browned.


Optional Toppings:

Maple Syrup

Honey

Dust with powdered sugar

Fresh Berries

Powdered Sugar Glaze (see below)


Powdered Sugar Glaze:

My kids love it when I make their special "pancake sauce".

2 cups Confectioner's Sugar

2-4 tbsp Milk or Half & Half

1 tsp Vanilla Extract (optional)


Whisk all ingredients in a bowl and enough liquid (add a little at a time) to thin the glaze to your desired consistency and drizzle over the top of your pancakes. This is also good over scones. Enjoy!
