Meal Prepping!

Staying healthy while being a busy mom can be challenging. Here is one way I make sure I'm keeping on track when it comes to nourishing my body.

I do my best to make sure I'm eating healthy food. I do struggle with eating enough. Our daily schedule can be hectic and I sometimes don't eat until late in the afternoon. What helps me is being consistent. Planning out a menu for the day. I've created a plan that works for me and I'm doing that I can to stick with it.

I have one body. I want to do what I can to keep it running as strong and healthy as possible not only for myself but for my children. They watch everything I do and it's important to me to show them how to make healthy choices.
What I'm eating...
Here is my menu for this week :
Breakfast
Coffee (1/2 decaf) with a splash of oat milk creamer
Non-fat greek yogurt with organic blueberries
Lunch
Meal Prep: instant pot shredded chicken with salsa over quinoa, lettuce with lemon juice and avocado oil, blueberries
Sparkling water or Spindrift
Dinner
Lettuce with feta, avocado, tomatoes, Persian cucumbers, lemon juice, avocado oil
Salmon
Sparkling water or Spindrift
Dessert
If I'm craving something sweet I will have a few dark chocolate covered thin pretzels. Yum!
Water! Water! Water!! I make sure to stay hydrated especially on the days that I go to the gym.
If I'm extra hungry on the days I'm burning more calories due to my workouts I'll add a protein shake.

The containers I use can be found on Amazon (I love them but will eventually buy glass containers.) They are BPA free, microwave, fridge and freezer safe. We do not like to be wasteful so we hand wash them and re-use them a couple of times. We also choose not to put them in the microwave. I don't like to heat food in plastic. A lot of the food I prep is good cold or if we're at home, we'll throw it in a bowl and heat it up.
