Comfort food at a time when we need it most.

I do what I can to eat healthy but in times like this comfort food is almost a necessity.

Broccoli, Chicken, Cheese Casserole
I've been eating this since I was a kid. It's filling and super yummy. Another plus... it's very easy to make.

Most of us are isolated in the house and doing the best we can to keep a "normal" routine as much as possible. Part of being "normal", for us, is going to the grocery store every few days to make fresh meals. Since I'm personally not comfortable making routine trips to the store during the COVID-19 pandemic, especially during "shelter in place", I'm planning meals that are filling and last a few days. This recipe fits the bill so I thought I would share it with you.
Ingredients:
4-6 boned/ skinned chicken breasts (rotisserie chicken also works)
2 bunches fresh broccoli (I use bagged organic broccoli florets)
1 cup mayonnaise
1 cup cream of chicken soup
1 cup milk
1 tablespoon lemon juice (I use 2-3 tbs. fresh)
2 cups sharp shredded cheddar cheese
Cook chicken until tender (boil or bake) and shred or cut into bite sized pieces.
Cook broccoli until tender (I steam it to retain the nutrients). Cut each into bite size pieces.
Place the chicken into an 8 x 12 casserole pan; then put broccoli on top of that.
Cover with half of the cheese (1 C).
Blend milk, mayo, soup and lemon juice until smooth. Pour over the top.
Sprinkle remainder of the cheese on top.
Bake 1/2 hour at 350 degrees.
Eat by itself or serve over rice and ENJOY!
** Note: This can be prepared in advance and refrigerated. Then simply take out and bake.
